This is the PT1000, NOT the PT100.
PT1000 sensor with fibreglass heat-proof sleeving, and high-temperature wire. (2-wire type).
PT1000 sensors use platinum to detect temperature variations due to changing resistance. Unlike thermistors, they work over a wide range of temperatures and are rated for 400C in 3D printing applications.
Might be possible to connect them to 8-bit boards (Marlin etc.) as a thermistor but you will need to create a thermistor table, and the resolution might not be very high as the resistance range is fairly small between room temperature and printing temperatures. Some investigation is needed here.
Supplied with 200cm high-temperature wire (rated for 200C), and fibrglass sleeving for use near the heater block, these units have an E3D cartridge-style sensor, which fits E3D heaterblocks 20mm length and 3mm diameter.
Resistance measured 1071 Ohms at 20C (referenced against k-type thermocouple). Resistance rises linearly as temperature rises.
